Nourish
A southern staple, collard greens are an excellent source of vitamin A, vitamin C, and calcium. They are a rich source of vitamin K, and a good source of iron, vitamin B-6, and magnesium.
Collard greens also contain thiamin, niacin, pantothenic acid, and choline.
Collard greens are high in both fiber and water, which helps to promote good digestive health.
Adding black-eyed peas and brown rice gives a more healthful version of a southern favorite.
Collard green chips
You can make collard-green chips like this:
• Wash you hands with soap and water.
• Remove the ribs from the collard greens, tear or slice
• Toss the leaves in extra-virgin olive oil
• Sprinkle lightly with a choice or a combination of Cajun seasoning, pepper, chili powder, roasted red pepper flakes, and garlic powder
• Bake them at 275 degrees Fahrenheit for 15 to 30 minutes or until they are crisp
Walk
When you go to walk your final mile on this challenge don’t think of it as the end of a 12 days of fitmas challenge, but rather as the start of a new habit. Take this daily walking into the next year and become healthier by walking and nourishing your body. Share pictures in the comments! #MSUext #EatwithExtension
